Red Onion – Red Wine Soup

Stock:
Several branches of thyme
8 branches of parsley
3 bay leaves
3 cloves garlic
½ t salt
8 cups cold water

Place all stock ingredients in pot and bring to a boil.

Soup:
4T virgin olive oil
2 lb red onions (diced)
1 lb tomatoes (diced)
4 cloves garlic
½ t salt
2 T black pepper
1 cup red wine

Warm oil and saute onions until soft, add rest of ingredients and cook for 15 min then add wine, bring to a boil then add to the stock.

Pour into blender and puree all of the ingredients.

Soup then serve, with french bread
